Preparation Steps

  1. Step 1/4

    Stir together the flour, sugar and salt in a large bowl. Crack in the eggs and whisk gently.

  2. Step 2/4

    Pour in one third of the milk and mix to make a smooth batter. Add the remaining milk and double cream, mix well and let it sit for one hour.

  3. Step 3/4

    Heat a non-stick frying pan on a medium heat and add 15g of butter. Once melted, pour it into the crêpe batter.

  4. Step 4/4

    Return the pan back to the heat and add a knob of butter. Pour in enough crêpe batter to cover the base of the pan, swirl well and cook until the top looks dry. Flip and cook for another minute or two.
