    Cut a 1-lb salmon filet into 4-6 slices.

    Add neutral oil to the hot pan.

    When it’s shimmering and slightly smoking, add the salmon.

    Sear undisturbed for about 3 min; flip and cook for another 1-2 minutes.

    Transfer to serving plates with steamed rice.

    Optional: add in a handful of sliced scallion to the hot pan after removing the salmon.

    Toss with the rendered salmon fat/oil until just wilted.
