    Sauté garlic, ginger, shallot, Thai chili pepper in avocado oil.

    Add Maesri red curry paste, stir and cook.

  3. Step 3/8

    Add coconut milk and hot water, bring to a boil then simmer.

  4. Step 4/8

    Add chopped kuri squash, cover and simmer until tender.

  5. Step 5/8

    Stir in cooked chickpeas, cover and cook until warmed.

  6. Step 6/8

    Add cubed tofu, stir, cover and simmer to warm.

  7. Step 7/8

    Stir in fish sauce, taste for seasoning, add lime juice.

  8. Step 8/8

    Serve curry in bowls, garnish with cilantro, onion, chili pepper.
