Preparation Steps

  1. Step 1/10

    Mix all ingredients except 30g of butter in the planetary mixer.

  2. Step 2/10

    Work the dough until it is homogeneous and add the soft butter little by little, making sure it is well absorbed before adding the next one.

  3. Step 3/10

    Flatten it slightly on a baking tray with baking paper, cover with plastic wrap and leave in the fridge for 12 hours.

  4. Step 4/10

    Prepare the butter block by flattening it between two sheets of baking paper measuring 20cm×40cm. Leave in the fridge for 12 hours.

  5. Step 5/10

    Roll out the dough 40×40 and encase the butter, make a 4-fold and rest for 15 minutes in the freezer.

  6. Step 6/10

    Take it back, roll it out and make a 3-fold. Another rest in the freezer for 15 minutes.

  7. Step 7/10

    Roll out the dough to about 50/60 cm high 18/20.

  8. Step 8/10

    Cut to a width of 8cm, insert the chocolate sticks and form.

  9. Step 9/10

    Let it rise almost to doubling, brush with egg and cream emulsion.

  10. Step 10/10

    Bake for 15 minutes at 200g and 15 minutes at 180 degrees.
