Preparation Steps

  1. Step 1/10

    Mix and knead all the ingredients in a bowl until a dough is formed.

  2. Step 2/10

    Roll out between two sheets of baking paper to a thickness of 2/3mm. Leave in the fridge to solidify.

  3. Step 3/10

    Pour water and butter into a pan, as soon as the butter has melted and the first bubbles of boiling appear, pour in the flour in one go.

  4. Step 4/10

    Stir with a wooden spoon until the mixture completely detaches from the sides of the pan and is compact.

  5. Step 5/10

    Cool the mixture on a work surface or in a bowl by stirring it.

  6. Step 6/10

    Add one egg at a time, always completely absorbing the previous one.

  7. Step 7/10

    Fill a piping bag with a smooth nozzle and form the bignè (about 3cm).

  8. Step 8/10

    Cut the craquelin into discs of the same width as the bignè, place on top of the bignè.

  9. Step 9/10

    Bake for 20 minutes at 200 degrees ventilated and another 5 minutes at 180 degrees with the door slightly open.

  10. Step 10/10

    Fill as desired.
