Preparation Steps
Step 1/13
Preheat the oven to 200C/gas mark 6. Line a cake tin with baking paper and butter the sides.
Step 2/13
Melt the butter into the milk in a saucepan, add the vanilla seeds and set aside.
Step 3/13
Stir the cream cheese in a bowl until it is smooth and slightly runny over a Bain-Marie.
Step 4/13
Stir together the flour, cornflour and salt.
Step 5/13
Whisk in half the sugar, eggs yolks, milk and melted butter to the cream cheese.
Step 6/13
Add the lemon zest and juice.
Step 7/13
Sift over the dry ingredients and stir with a whisk.
Step 8/13
Whisk egg whites with cream of tartar until frothy, then add the remaining sugar and whisk until you reach soft peak stage.
Step 9/13
Whisk one-third of the meringue into the cream cheese mixture, then gently fold in the rest in 2 batches.
Step 10/13
Pour this mixture gently into the prepared cake tin.
Step 11/13
Bake this in a bain-marie for 25 minutes, then reduce the oven temperature to 140C/gas mark 1 and bake for a further 30 minutes. Turn the oven off.
Step 12/13
After 20 minutes in the turned off oven, take the cheesecake out of the roasting tin and immediately remove the cheesecake from its tin.
Step 13/13
Allow to cook fully before dusting with icing sugar.
