Preparation Steps

  1. Step 1/10

    Preheat the oven to 425. Line 2 sheet pans with parchment paper.

  2. Step 2/10

    Add the broccoli and carrots to one sheet pan, add the olive oil, salt and paprika and toss to coat.

  3. Step 3/10

    Place in the oven for 30 minutes, flipping halfway.

  4. Step 4/10

    Add the chickpeas, olive oil, honey, salt and 1 tbsp sesame seeds to the second sheet pan.

  5. Step 5/10

    Toss to coat and place in the oven for 17-19 minutes.

  6. Step 6/10

    While everything cooks, make the sauce, add the peanut butter, honey, soy sauce, vinegar and sesame oil.

  7. Step 7/10

    Whisk to combine until smooth.

  8. Step 8/10

    Add the noodles to a bowl, then add the tamari soy sauce, sesame oil and half the scallions.

  9. Step 9/10

    Toss to coat, then add the veggies and the chickpeas.

    Add the cashews, remaining scallion and drizzle with the sauce.
