Preparation Steps

  1. Step 1/4

    Preheat the oven to 400. Line a sheet pan with parchment paper.

  2. Step 2/4

    Make the tzatziki. Drain the liquid from the cucumber. Add the yogurt, cucumber, dill, mint, olive oil, garlic, lemon juice, salt and pepper to a large bowl. Whisk to combine. Place in the refrigerator for at least 30 minutes.

  3. Step 3/4

    Make the peppers. Add the peppers to the sheet pan, drizzle with the oil and balsamic then season with the salt and pepper. Place in the oven for 25 minutes, tossing halfway.

  4. Step 4/4

    Spread the tzatziki onto the sheet pan, top with the peppers, dill, pistachios, feta, black pepper and a drizzle of hot honey.
