Preparation Steps

    Roll out the dough to a thickness of 3mm and cut the biscuits.

    Freeze for 15 minutes and bake at 170 degrees for about 15 minutes.

    For the salted caramel, melt the sugar in a pan, adding it little by little as it melts without stirring but moving the pan from time to time.

  4. Step 4/10

    As soon as it is melted, add the hot cream in a thin stream, stirring until it has evaporated and the caramel is smooth and homogeneous.

    Remove from the heat and add the butter, stirring with a whisk, and finally the salt.

    Pour into a bowl and let cool.

    Leave in the fridge covered with film until it is very cold and whip with an electric whisk until it is fluffy, frothy and creamy.

    Put back in the fridge before filling the biscuits in this way it will be more compact.
