Preparation Steps
Step 1/7
Preheat the oven to 425. Place a cast iron pan or an oven-safe pan into the oven to heat for 10-15 minutes.
Step 2/7
Cut the eggplant lengthwise then score the top in a diagonal checkered pattern. Brush the top of the eggplant with the oil, then season with salt.
Step 3/7
Remove the pan from the oven, add a bit of olive oil, then place the eggplant face down. Place in the oven for 10-14 minutes, until the top is browned.
Step 4/7
While the eggplant cooks, make the glaze. Add the jelly, tamari, rice vinegar, sesame oil, sriracha and garlic to a small bowl. Mix to combine.
Step 5/7
Remove the eggplant from the oven and carefully flip it over. Brush the glaze over the top then place it back in the oven for 25-30 minutes, until the top is caramelized and the eggplant is tender.
Step 6/7
Next, make the sesame sauce. Add the tahini, water, rice vinegar, salt, sesame oil and pepper to a small bowl. Whisk well until smooth.
Step 7/7
Serve the eggplant topped with the sesame seeds, scallions and red pepper flakes.
