Preparation Steps

  1. Step 1/4

    Preheat the oven to 425. Drizzle olive oil on the bottom of a large sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season with salt. Place in the oven for about 20 minutes.

  2. Step 2/4

    While the sweet potatoes roast, make the cheese mixture. Add all ingredients to a bowl and mix to combine.

  3. Step 3/4

    Remove sweet potatoes from the oven, flip them and gently mash down the centers. Use a large spoon to spoon about 1/4 cheese mixture and top each sweet potato half. Place them back in the oven for about 20-25 minutes, until just browned on the tops.

  4. Step 4/4

    Top with scallions and pepper.
