Preparation Steps

  1. Step 1/6

    Wash, peel, and roughly chop carrot, fennel, and celery; process in a food processor.

  2. Step 2/6

    Sauté onion in olive oil; add processed vegetables, sliced potatoes, tomato concentrate, and diluted saffron.

  3. Step 3/6

    Add fish carcass and half of the fish; reserve the rest.

  4. Step 4/6

    Soften bread with a ladle of broth.

  5. Step 5/6

    Blend egg yolks, garlic, softened bread, oil, and saffron in lemon until mayonnaise-like.

  6. Step 6/6

    After 25 min of cooking, remove carcass, blend soup, return to pot with remaining fish for 20 min.
