Preparation Steps
Step 1/6
In a mixing bowl, combine 5 Tbsp tahini, 3 Tbsp maple syrup, juice of 1/2 lemon, 1 Tsp chili sauce (optional), salt to taste, 1/2 Tsp cumin, 1/2 Tsp ground coriander, and 1/2 Tsp paprika. Stir until well combined and creamy. Add water as needed to achieve desired consistency.

Store the tahini sauce in the fridge for up to 1 week. Use as a dressing or dip.

Preheat the oven to 200C/400F. Cut 1 cauliflower into florets and place them on a baking sheet.

In a mixing bowl, combine zest and juice of 1 lemon, salt to taste, 1 Tsp black pepper, and a good drizzle of olive oil. Mix well and pour over the cauliflower florets.
Step 5/6
Bake the cauliflower in the oven for 25 minutes until golden and tender.
Step 6/6
Serve the baked cauliflower on top of the tahini sauce.
