Preparation Steps
Step 1/6
Clean the barramundi and pat it dry. Coat it with egg yolk, a pinch of salt, turmeric powder, and cornstarch.
Step 2/6
Heat oil in a frying pan over medium heat. Fry the fish until golden brown and crispy. Set aside.

In the same pan, sauté chopped red onion, garlic, coriander root, galangal, and lemongrass until fragrant.

Add Thai sauce, fish sauce, oyster sauce, and Thai palm sugar. Stir well.

Add bird's eye chili, tomato, and cornstarch water. Cook until the sauce thickens.

Squeeze lime juice into the sauce and mix well. Pour the sauce over the fried fish and serve.
