Preparation Steps
Step 1/5
In a mixing bowl, combine ½ cup creamy peanut butter, ⅓ cup tamari/soy sauce, 2 ½ tablespoons Thai red curry paste, 1 tablespoon chopped pickled ginger, and 1 tablespoon toasted sesame oil. Mix well to make the peanut sauce.
Step 2/5
In another mixing bowl, combine ⅓ cup sweet Thai chili sauce, ⅓ cup tamari/soy sauce, 6 cloves chopped garlic, 1 tablespoon fresh grated ginger, and 2 tablespoons chili paste. Add 2 pounds cubed flank steak and mix to coat. Let it marinate for at least 15 minutes.
Step 3/5
Thread the marinated steak cubes onto skewers.
Step 4/5
Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the steak is cooked to your desired doneness.
Step 5/5
Serve the skewers with rice or coconut rice, limes, avocado, sesame seeds, and cilantro. Be generous with the peanut sauce for dipping.
