Preparation Steps
Step 1/3
Prepare the fried prawns by coating them in flour, dipping them in beaten eggs, and then covering them with panko crumbs. Fry in a frying pan on the stove at 170ยฐC/338ยฐF until golden brown.
Step 2/3
Poach the eggs by gently placing them into boiling water for 6 minutes. Drain the water and immediately place the eggs into an ice water bath. Refrigerate for later use.
Step 3/3
Prepare the squid ink ramen noodles by mixing squid ink with water. In a bowl, mix flour, baked baking soda, and sea salt. Slowly add the squid ink water mixture into the flour mixture and rub through. Roll into a ball and divide into two. Run through a pasta machine from the widest setting to the third setting, folding together on the third pass-through. Repeat this 6 times before processing through the final desired setting.
