Preparation Steps
Step 1/8
Boil water in a pot and cook the spaghetti according to package instructions.

While the spaghetti is cooking, heat extra virgin olive oil in a pan over medium heat.

Add the garlic clove to the pan and sauté until golden, then remove it.
Step 4/8
Add the spicy guanciale to the pan and cook until crispy.
Step 5/8
Pour in the white wine and let it evaporate.

Add the peeled tomatoes and nduja or cream to the pan, and cook for 10 minutes.
Step 7/8
Drain the spaghetti and add it to the pan with the sauce. Mix well.
Step 8/8
Serve the pasta hot, garnished with chopped parsley and grated Calabrian pecorino.
