Preparation Steps
Step 1/14
Heat a few tablespoons of olive oil with one clove of garlic to infuse the oil.
Step 2/14
Add the tomato passata, one can of crushed whole peeled tomatoes, and a splash of water.
Step 3/14
Add fresh basil and salt to taste. Let it simmer for 30 minutes.
Step 4/14
Slice the eggplants and place them in a large strainer with coarse sea salt for 30 minutes.

Pat dry the eggplant.

Dip the eggplant in flour and fry in olive oil until golden.
Step 7/14
Place on paper towels to drain the oil.

Rub a 13x9 baking tray with olive oil and some breadcrumbs.

Add a scoop of sauce to the bottom of the tray.

Layer with eggplant, mozzarella, shaved Parmigiano Reggiano, fresh basil, and sauce. Repeat layers.

For the top layer, add just sauce, Parmigiano, and basil.

Bake for 35 minutes at 400°F (200°C).

Broil at the end for 2 minutes for a crispy top.
Step 14/14
Let it sit and cool before serving.
