Preparation Steps
Step 1/7
Prepare the eggplants by trimming the ends and cutting them in half. Score the flesh in a crosshatch pattern.
Step 2/7
Place the eggplants on a baking tray lined with parchment paper. Season with fine salt and drizzle with olive oil. Bake at 180°C (356°F) for 30 minutes.
Step 3/7
While the eggplants are baking, sauté a peeled garlic clove in a pan with a drizzle of olive oil.
Step 4/7
Add the tomato pulp, basil, and a pinch of fine salt to the pan. Cook until the sauce thickens, about 10 minutes.
Step 5/7
Remove the eggplants from the oven and press the centers to create a cavity. Fill with the tomato sauce.
Step 6/7
Top the eggplants with cubed mozzarella, Taggiasca olives, and a sprinkle of oregano. Return to the oven and bake at 180°C (356°F) for another 10 minutes.
Step 7/7
Serve the stuffed eggplants hot and melty.
