Preparation Steps
Step 1/10
Cook 1 kg of potatoes until tender.
Step 2/10
Mash the cooked potatoes and mix in 2 tbsp of cornstarch, salt, and pepper.
Step 3/10
In a frying pan, heat 4 tbsp of olive oil and 1 tbsp of butter.
Step 4/10
Add 2 chopped tomatoes and 2 chopped green onions to the pan and cook for 10 minutes on low heat.
Step 5/10
Add 1 tsp of salt, a pinch of pepper, 1 tsp of achiote, 1 tbsp of vinegar, and 0.5 cup of water. Cook for another 10 minutes or until reduced.
Step 6/10
Finish with chopped cilantro.
Step 7/10
Add a can of tuna or liver with an egg to the mixture.
Step 8/10
Use a ziplock bag to shape the potato mixture into round forms.
Step 9/10
Mix 0.5 cup of wheat flour, 1 egg, and 0.5 cup of soda. Coat the potato balls in the mixture.
Step 10/10
Fry the potato balls in hot oil until golden brown.
