Preparation Steps
Step 1/8
Grate the cucumber, squeeze out the water, then mix with the yoghurt, minced garlic clove, and a splash of vinegar.
Step 2/8
Mix the tahini with lemon juice, then add water to loosen. Season with salt.
Step 3/8
Slice the onions, then mix in a bowl with lemon juice. Season with salt, then scrunch with your hands. Add sumac and fresh parsley, then set aside.

Heat a cast iron pan to medium-high heat, then add olive oil.

Place the mushrooms in the pan, then press down with another pan or weight to release moisture. Flip the mushroom over, season with salt, pepper, and chicken seasoning. Weigh down the other side. Continue until the mushroom is flattened and golden brown.
Step 6/8
Baste with butter and garlic, then set aside.
Step 7/8
Toast the flatbread in the same pan.
Step 8/8
Spread garlic yoghurt on the bread, add mushrooms, onions, pickled pepper, and drizzle with tahini sauce.
