Preparation Steps
Step 1/7
Preheat a grill to 185 degrees F.
Step 2/7
Season the steak well with salt and pepper, add a meat probe, then smoke low and slow for 35 - 40 minutes.

Heat a skillet over medium-heat, add a splash of oil, then sear the steak on both sides, until golden on the outside and perfectly cooked through on the inside.

Heat a skillet over medium-heat, then melt butter, add shallots, thyme, and soften.

Add red wine, reduce, add wild blueberries, lemon zest, salt, and cook until bubbling and thickened. Lastly stir in a bit of lemon juice.

Brush your baguette with olive oil, toast (in a skillet or the oven), then dollop over a heaping helping of boursin cheese, and melt under the broiler.
Step 7/7
Build your crostinis with a piece of steak, a dollop of blueberry jam, some watercress and a little balsamic reduction.
