In a large bowl, beat the eggs. Stir in the quinoa, feta, onion, parsley, garlic, and salt. Stir in the breadcrumbs; let sit for 2 minutes so the crumbs can absorb some of the moisture. Using a β measuring cup, scoop, firmly pack, and shape the mixture into 7 to 8 patties.
Step 2/2
Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add half of the patties and cook until browned and crisp, 3 to 4 minutes per side. Transfer the cooked fritters to a large paper towelβlined plate and tent with foil to keep warm. Repeat with the remaining 2 tablespoons oil and the patties.
