Preparation Steps
Step 1/8
Separate egg whites from yolks and beat whites into stiff peaks.
Step 2/8
Add wet ingredients (Greek yogurt, vanilla extract, oil) to yolks, then add dry ingredients (vanilla pudding mix, powdered sugar, flour).
Step 3/8
Gently fold in the beaten egg whites into the yolk mixture using a spatula.
Step 4/8
Line an 18 cm diameter mold with paper, grease with oil or a bit of the mixture.
Step 5/8
Place the mold in a baking tray with a bit of water underneath the rack and bake in a preheated oven for about 45 minutes.
Step 6/8
Once golden brown, turn off the oven and let the cake cool before removing from the mold and sprinkling with powdered sugar.
Step 7/8
For the blueberry sauce, place blueberries and sugar in a pot, mash with a potato masher, and cook until it becomes a puree.
Step 8/8
Once cooled, pour the blueberry sauce over each piece of cake as desired.
