Preparation Steps

Preheat the oven to 200ยฐC. Place the aubergines and red bell peppers on a baking tray along with the garlic heads. Brush with olive oil and bake for 45 minutes.

For the eggplant caviar, scoop out the flesh of the aubergines and mash it with the roasted garlic. Add tahini and mix well.

For the muhammara, peel the roasted red bell peppers and blend them with walnuts, breadcrumbs, and roasted garlic.

For the guacamole, mash the ripe avocados with finely chopped tomato, red onion, lime juice, coriander, olive oil, and chili powder.

For the hummus, blend the chickpeas with lemon juice, cumin, tahini, and garlic clove. Add an ice cube for a smoother texture. Top with buttered pine nuts.
