In a mixing bowl, combine creamy peanut butter, tamari/soy sauce, toasted sesame oil, pickled ginger juice, Gochujang, honey, and lime juice. Mix until smooth.

Heat toasted sesame oil in a pan over medium heat. Add sliced chicken thighs or breasts and cook until browned.

Add chopped fresh ginger, scallions, salted butter, and garlic to the pan. Cook until fragrant.
