Preparation Steps
Step 1/6
In a pan, add coconut milk, salt, and pandan leaf. Cook until boiling over medium heat while stirring continuously to prevent the coconut milk from breaking. Let it cool.
Step 2/6
Melt the margarine.
Step 3/6
Activate the yeast. In a bowl, add warm water, granulated sugar, and instant yeast. Stir until well combined, cover, and let sit for about 5 minutes until it becomes frothy.
Step 4/6
In another bowl, add eggs and granulated sugar. Mix until the sugar dissolves. Add baking powder, flour, and the cooled coconut milk mixture alternately while mixing at low speed.
Step 5/6
Add the melted margarine, sweetened condensed milk, vanilla extract, and the activated yeast mixture. Continue mixing at low speed until well combined. Cover the batter and let it sit for 1 hour until it rises. Stir the batter to break the air bubbles.
Step 6/6
Heat the mold, grease it with margarine, and pour the batter until it fills ¾ of the mold. Cover the mold and cook until the cake is done and the surface is dry. Use low heat to ensure the inside is cooked evenly and doesn't burn. Serve.
