Preparation Steps

Rinse 1 cup split black gram lentils (urad dal) and 1/2 cup red lentils (masoor dal) thoroughly, then cover them with plenty of water.

Soak the rinsed lentils overnight for about 8 to 12 hours until softened.

Drain the soaked lentils completely in a fine-mesh strainer.

Blend the drained lentils with 1/2 cup water into a thick, mostly smooth batter.

Transfer the batter to a mixing bowl and stir in 1 teaspoon salt and 3/4 teaspoon baking soda until evenly combined.

Rest the lentil batter for 15 minutes while preparing the frying oil.

Heat about 4 cups neutral frying oil in a deep wok or frying pan over medium heat.

Drop spoonfuls of lentil batter into the hot oil, leaving space between each dumpling.

Fry the dumplings for 4 to 6 minutes, turning them occasionally until golden brown and cooked through.

Lift the fried dumplings from the oil with a slotted spoon and drain them briefly.

For immediate serving, soak the fried dumplings in warm water for 15 minutes.

Gently press each soaked dumpling between your palms to remove excess water.

Arrange the squeezed dumplings in a single layer in a serving dish.

Whisk 2 1/2 cups plain yogurt, 3/4 cup milk, a pinch of salt, and 1 tablespoon sugar until smooth.

Pour the seasoned yogurt mixture evenly over the arranged dumplings.

Drizzle green chutney and tamarind chutney over the yogurt-covered dumplings.

Top the Dahi Baray with papri crackers, chaat masala, pomegranate seeds, and cilantro before serving.
