Preparation Steps
Step 1/13
Preheat the oven to 180°C / 350°F. Grease and line one 6-inch square cake pan.

Beat 100 g butter and 100 g granulated sugar until the mixture is pale, light, and fluffy.

Beat in 1 teaspoon vanilla extract. Add the 100 g eggs one at a time, beating after each addition.

Sift 100 g all-purpose flour and 1 teaspoon baking powder into a separate bowl. Whisk the dry ingredients together.

Fold half of the dry ingredients into the egg mixture. Fold in 1 to 2 tablespoons milk.

Fold in the remaining dry ingredients until a thick, smooth batter forms. Do not overmix.

Transfer the batter to the prepared cake pan. Smooth the surface evenly.

Bake for 40 to 45 minutes at 180°C / 350°F. Check that a skewer inserted in the center comes out clean.

Cool the cake in the pan for 10 minutes. Transfer it to a cooling rack and cool completely.

Whisk 100 g icing sugar and 15 g melted butter in a bowl. Add a few drops of milk until the glaze is thick but spreadable.

Slice the cooled cake horizontally into two even layers. Spread 60 g strawberry jam over the bottom layer.

Place the second cake layer on top of the jam. Spread the glaze over the top and sides of the cake.

Roll or press the glazed cake in 120 g desiccated coconut until all glazed surfaces are coated. Slice into 6 portions to serve.
