Preparation Steps

Wash the melons, remove their seeds and rind, then cut enough flesh into small pieces to obtain 900 g (31.7 oz).

Finely zest one lime, avoiding the bitter white pith.

Place the 900 g melon flesh and 500 g cane sugar in a large pot.

Add the lime zest, 1 teaspoon ground cinnamon, grated nutmeg, amber rum, and a pinch of salt.

Stir the mixture and bring it to a full boil over medium-high heat.

Reduce the heat to low and simmer for 30 to 45 minutes, stirring regularly to prevent the jam from sticking.

Cook until the mixture has reduced by about half and coats a spoon with a thick, glossy consistency.

If the melon releases excessive liquid, drain off the syrup and return only the melon pulp to the pot.

Immediately ladle the hot jam into sterilized jam jars, leaving a small space below each rim.

Seal the jars, turn them upside down, and let them cool completely before storing them in a cool place.
