Step 3/12
Season both sides of the flattened chicken with the salt, black pepper, garlic powder, and paprika.
Step 4/12
Spread 1 1/2 teaspoons of Dijon mustard over one side of each chicken breast.
Step 5/12

Step 6/12
Roll each chicken breast tightly around the filling and secure each roll with 2 toothpicks.
Step 7/12
Whisk the egg in one shallow bowl and combine the panko breadcrumbs with Parmesan cheese in the second shallow bowl.
Step 8/12
Dip each chicken roll in the beaten egg, then coat it completely in the panko-Parmesan mixture.
Step 9/12
Spray the air-fryer basket with half of the olive oil spray and arrange the chicken rolls seam-side down in a single layer.

Step 11/12
Turn the chicken rolls over and air fry for 8 to 10 minutes, until the centers reach 165°F (74°C).
Step 12/12
Rest the chicken for 3 minutes, then remove the toothpicks before serving.
