Preparation Steps
Step 1/14
Weigh 240 g all-purpose flour and 50 g icing sugar into a large mixing bowl.

Add 100 g cold cubed unsalted butter. Rub it into the dry ingredients until the mixture resembles wet sand.

Pour in 45 ml cold milk. Pinch the mixture together just until a dough forms.

Flatten the dough into a disc and wrap it in parchment paper.

Chill the wrapped dough in the refrigerator for 120 minutes.

Chop 250 g fresh strawberries into bite-size pieces.

Toss the chopped strawberries with 2 to 3 tablespoons caster sugar and 1 tablespoon lemon juice.

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

Roll the chilled dough into a roughly 30 cm (12 in) circle between two sheets of parchment paper.

Transfer the rolled dough to the lined baking sheet. Spoon the strawberry filling into the center, leaving a 5 cm (2 in) border.

Fold the exposed dough border over the strawberry filling, overlapping the pleats as needed.

Brush the folded pastry edge lightly with a small amount of milk. Sprinkle 15 g almond flakes over the pastry and filling.

Bake the galette at 180°C (350°F) for 20 to 25 minutes. Remove it when the crust is golden and the strawberry juices are bubbling.
