Preparation Steps
Step 1/12
Preheat the oven to 180°C / 350°F. Grease the 6-inch oven-safe skillet with a little of the butter.
Step 2/12
Whisk 66 g caster sugar, 33 g brown sugar, and 1 egg in a mixing bowl until light, pale, and slightly thickened.
Step 3/12
Melt 66 g dark chocolate with 38 g butter in a microwave-safe bowl. Stir until smooth.
Step 4/12
Pour the melted chocolate mixture into the egg mixture. Whisk until fully combined.
Step 5/12
Add 20 g all-purpose flour and 8 g cocoa powder to the brownie batter. Fold just until no dry streaks remain.
Step 6/12
Stir 20 g chocolate chips into the brownie batter. Spread the batter evenly in the prepared skillet.
Step 7/12
Combine 40 g all-purpose flour and 0.6 g baking powder in a second mixing bowl. Set the dry mixture aside.
Step 8/12
Mix 40 g melted butter, 12.5 g caster sugar, 12.5 g brown sugar, and 15 ml milk in the second bowl. Stir until the sugars are moistened.
Step 9/12
Fold the flour mixture into the wet cookie mixture. Stir in 50 g chocolate chips to make a thick cookie dough.
Step 10/12
Spoon chunks of cookie dough over the brownie batter. Scatter the remaining chocolate chips over the top.
Step 11/12
Bake the brookie for 15 to 20 minutes at 180°C / 350°F. Remove it when the edges are set and the center remains soft and fudgy.
Step 12/12
Cool the skillet for 10 minutes. Serve warm directly from the skillet for the fudgiest texture.
