Preparation Steps
Step 1/14
Rinse the basmati rice with cold water until the water runs mostly clear, then soak it in water for 20 to 30 minutes.
Step 2/14
Drain the soaked basmati rice thoroughly and set it aside while preparing the masala.
Step 3/14
Slice the onion, chop the tomatoes, peel and cube the potatoes, slit the green chilies, and chop the coriander leaves.
Step 4/14
Heat 120 ml cooking oil in a heavy lidded pot over medium heat. Fry the sliced onion until light golden.
Step 5/14
Add cumin seeds, whole black peppercorns, whole cloves, curry leaves, and ginger garlic paste to the pot. Fry the aromatics for 2 to 3 minutes.

Add chopped tomatoes, green chilies, chili powder, and turmeric powder. Cook while stirring until the tomatoes soften.
Step 7/14
Add a small splash of water and cover the pot. Cook the masala until the oil separates and rises to the surface.

Add the cubed potatoes and 120 ml water to the masala. Cover and cook over medium heat until the potatoes begin to soften.
Step 9/14
Crumble in the chicken stock cube and add biryani masala with chopped coriander leaves. Stir until the potatoes are evenly coated.

Add the drained basmati rice to the potato mixture. Gently fold it through without breaking the rice grains.
Step 11/14
Pour in the remaining 710 ml water and season with salt. Stir once and bring the liquid to a boil over high heat.
Step 12/14
Reduce the heat to medium and cover the pot. Cook until the visible water has evaporated from the rice surface.
Step 13/14
Reduce the heat to very low and cook the covered tahiri for 10 to 15 minutes until the rice is fully tender and fluffy.
Step 14/14
Rest the tahiri, covered, for 5 minutes. Fluff gently with a wooden spoon and serve hot.
