Preparation Steps

Check that the skin-on center-cut salmon fillet has been previously frozen for food-safety purposes, then thaw it completely in the refrigerator.

Place the skin-on center-cut salmon fillet skin-side down in the rimmed baking dish.

Drizzle the 1 tbsp (15 ml) brandy evenly over the flesh side of the salmon fillet.

Combine the 1/2 cup (100 g) brown sugar and 1/2 cup (145 g) kosher salt in the mixing bowl.

Spread the brown sugar and kosher salt mixture evenly over the brandy-coated flesh of the salmon.

Cover the salmon completely with the 2 bunches (60 g) fresh dill, pressing the dill lightly into the cure.

Cover the rimmed baking dish tightly with plastic wrap. Place the small tray on top of the wrapped salmon.

Set the weight on the small tray to apply even pressure to the salmon during curing.

Refrigerate the weighted salmon for 4320 min. Keep the salmon covered and weighted throughout the cure.
Step 10/14
Once every 1440 min, uncover the salmon and spoon the accumulated curing juices over the fish. Re-cover and return the weight before refrigerating again.

After 4320 min, remove the salmon from the cure and scrape off the salt, sugar, and dill.

Slice the cured salmon thinly on a cutting board, cutting at a shallow angle and leaving the skin behind.

Serve the gravlax on 8 slices of rye bread with crème fraîche and fresh dill for serving.

Top each serving with capers and serve immediately while chilled.
