Preparation Steps
Step 1/10
Preheat the oven to 165°C fan (185°C conventional). Line the 24 x 16 x 3 cm baking tray with baking paper.

Melt 120 g unsalted butter gently in the saucepan. Remove the pan from the heat.

Add 200 g dark chocolate to the hot melted butter. Stir until the chocolate is fully melted and smooth.

Whisk 2 eggs, 100 g caster sugar, 100 g soft dark brown sugar, and a pinch of Maldon salt in a mixing bowl. Continue until the mixture is slightly thickened and glossy.

Pour the melted chocolate and butter mixture into the egg mixture. Whisk until evenly combined.

Add 40 g plain flour to the brownie batter. Fold just until no dry streaks remain.

Fold 40 g dark chocolate chips through the batter. Do not overmix.

Pour the brownie batter into the lined baking tray. Scatter 15 pitted cherries evenly over the surface.

Bake for 20 to 25 minutes. Remove when the edges look dry but the centre remains slightly fudgy.

Cool the brownies completely in the tray. Refrigerate for at least 4 hours before slicing into 9 to 12 pieces.
