Preparation Steps
Step 1/9
Zest 2 whole lemons and squeeze enough lemons to measure 1/2 cup (120 ml) lemon juice.
Step 2/9
Add 100 g caster sugar, 1/2 cup (120 ml) water, and all lemon zest to a saucepan.
Step 3/9
Heat the syrup over medium heat and stir until the sugar fully dissolves, about 3 to 5 minutes.

Remove the lemon syrup from the heat and let it cool for about 10 minutes.

Blend the cooled lemon syrup with 1/2 cup (120 ml) lemon juice and the remaining 1/2 cup (120 ml) water until smooth.

Strain the blended liquid through a fine-mesh strainer to remove zest and pulp solids.

Pour the strained lemon mixture into an ice cube tray and freeze until completely solid, about 4 hours.

Blend the frozen lemon cubes until they become smooth and have a sorbet-like consistency.
Step 9/9
Transfer the blended sorbet to a freezer-safe container and freeze for 2 to 3 hours until firm enough to scoop.
