Dice 1 small onion and mince 3 garlic cloves. Zest 1 small lemon.

Heat 1 tablespoon olive oil in a large deep skillet over medium-high heat.

Add the diced onion and 1 pound lean ground beef to the skillet. Cook for 5 to 7 minutes, breaking up the beef with a wooden spoon, until browned and the onion is softened.

Add the minced garlic, 2 teaspoons dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir frequently for 1 minute until fragrant.

Add 1 cup orzo, 2 cups low-sodium vegetable broth, and the 15-ounce can diced tomatoes with its juices. Stir until combined.

Bring the skillet mixture to a boil. Reduce the heat to medium-low once it boils.
