Preparation Steps

Add the 2 cups leftover mashed potatoes, 1 large egg, 1/2 cup crumbled feta cheese, 1/4 cup all-purpose flour, 2 tablespoons green onions, salt, and black pepper to a large mixing bowl.

Mix the potato mixture until evenly combined. Add a little more all-purpose flour if the mixture is too wet to shape.

Scoop about 1/3 cup of the potato mixture and roll it into a ball with your hands.

Flatten each ball with your palm into a pancake. Repeat to make 6 to 8 pancakes.

Heat 2 tablespoons olive oil in a large skillet over medium heat. Arrange half of the potato pancakes in the hot skillet.

Cook the first batch for 4 to 5 minutes per side. Turn the pancakes with a spatula when the underside is golden brown.

Transfer the cooked pancakes to a paper towel-lined plate and season while hot with salt and black pepper.

Cook the remaining pancakes in the skillet for 4 to 5 minutes per side. Add a small amount of extra olive oil only if the skillet becomes dry.

Serve the warm pancakes with Greek yogurt. Top with additional green onions if desired.
