Measure 1 litre milk and pour it into the kadai.

Bring the milk to a boil over medium heat.

Simmer the milk for 10 minutes. Stir occasionally to prevent scorching.

Whisk the rice flour with 1 cup milk in a mixing bowl until completely lump-free.

Gradually pour the rice flour slurry into the simmering milk. Stir continuously for 5 minutes.

Simmer the mixture for 5 more minutes. Stir intermittently until it begins to thicken.

Add the ground cardamom and sweetened condensed milk. Stir until the pudding is thick and creamy.

Add the milk powder and stir until fully dissolved and smooth.

Stir in the saffron strands, if using. Remove the firni from the heat.

Pour the hot firni evenly into 6 serving clay bowls.
Step 11/12
Garnish each bowl with chopped mixed nuts.
Step 12/12
Chill the firni for at least 120 minutes before serving cold.
