Step 1/9
Measure 125 ml milk, 250 ml heavy cream, 30 g caster sugar, 3/4 teaspoon agar agar powder, and 1 teaspoon vanilla extract.
Step 2/9
Pour the measured milk, heavy cream, caster sugar, agar agar powder, and vanilla extract into a saucepan.
Step 3/9
Whisk the mixture over medium heat until the sugar and agar agar powder are fully dissolved.
Step 4/9
Bring the mixture to a full boil, stirring continuously to prevent it from catching on the base of the saucepan.
Step 5/9
Boil the panna cotta mixture for 1 to 2 minutes, then remove the saucepan from the heat.
Step 6/9
Divide the hot mixture evenly among 4 ramekins.
Step 7/9
Refrigerate the filled ramekins for 2 to 3 hours until the panna cotta is firm and jiggly.
Step 8/9
Run a small knife around the edge of each chilled panna cotta, then invert each ramekin onto a plate.
Step 9/9
Top each panna cotta with about 25 g mixed berries and serve chilled.
