Preparation Steps
Step 1/10
Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.

Pierce the 2 medium sweet potatoes several times with a fork. Microwave until very tender, about 8 to 12 minutes.

Cool the sweet potatoes until safe to handle. Slice them open and scoop out the flesh into a mixing bowl.

Mash the sweet potato flesh until smooth. Add 1 cup almond butter and 1 large egg.

Add 1/2 cup maple syrup and 2 teaspoons vanilla extract. Stir until the mixture is smooth and glossy.

Add 1/8 teaspoon fine sea salt and 1/2 cup oat flour. Stir until no dry flour remains.

Add 1/3 cup cacao powder and 1 1/2 teaspoons baking soda. Fold until the batter is evenly chocolate-colored.

Fold in 1/4 cup mini dark chocolate chips. Spread the batter evenly in the prepared baking pan.

Bake until the center is set and a toothpick comes out mostly clean, about 25 to 30 minutes. Transfer the pan to a cooling rack.

Cool the brownies completely in the pan. Lift out and cut into 12 squares before serving.
