Preparation Steps
Step 1/12
Preheat the oven to 180°C (356°F).
Step 2/12
Chop 1/2 cup (65 g) cashews into coarse pieces.
Step 3/12
Add 2 cups (60 g) puffed quinoa, 1 cup (80 g) buckwheat flakes, chopped cashews, 1/2 cup (25 g) toasted coconut flakes, 1 tsp chai spice, and a pinch of salt to a mixing bowl.
Step 4/12
Mix the dry ingredients thoroughly until the chai spice and salt are evenly distributed.
Step 5/12
Add 1/3 cup (80 ml) coconut oil and 1/3 cup (80 ml) maple syrup to a saucepan.
Step 6/12
Heat the coconut oil and maple syrup gently, stirring until the coconut oil has melted and the mixture is smooth.
Step 7/12
Pour the warm maple-coconut mixture over the dry ingredients.
Step 8/12
Mix until every dry ingredient is well coated, keeping some larger clusters intact.
Step 9/12
Spread the granola mixture in an even, compact layer on the baking sheet.
Step 10/12
Bake for 15 to 20 minutes at 180°C (356°F), until golden and fragrant.
Step 11/12

Step 12/12
Break the cooled granola into chunks and transfer it to an airtight container.
