Preparation Steps
Step 1/17
Whisk 1 cup curd with 3 tablespoons chickpea flour until completely smooth.

Gradually whisk 3 cups water into the curd mixture to make a lump-free kadhi base.

Mix the remaining chickpea flour with 1/4 teaspoon ground turmeric, ground coriander, red chili powder, carom seeds, and salt.

Add about 1/2 cup water gradually and stir until a thick, spoonable pakora batter forms.

Heat 1 tablespoon cooking oil in a deep pan over medium heat.

Drop small portions of pakora batter into the hot oil and fry until golden and crisp.

Remove the fried pakoras with a slotted spoon and set them aside.

Heat the remaining 1 tablespoon cooking oil in a large pot over medium heat.

Add cumin seeds, 1/2 teaspoon carom seeds, mustard seeds, and fenugreek seeds; fry until fragrant.

Pour in the prepared curd base and stir continuously to prevent splitting.

Add 1/2 teaspoon ground turmeric, 1/2 teaspoon red chili powder, and salt to taste.

Bring the kadhi to a gentle boil, then simmer for 20 minutes until thickened.

Add the fried pakoras to the simmering kadhi and cook for 5 minutes.

Finely slice the green chili and chop the coriander leaves.

Heat a small amount of oil in a pan and add mustard seeds, green chili, red chili powder, and Kashmiri chili powder.

Fry the tempering briefly until fragrant, then pour it over the hot kadhi.

Garnish with coriander leaves, red chili flakes, and roasted ground cumin before serving.
