Preparation Steps
Step 1/13
Rinse the rice in cold water until the water runs mostly clear, then drain it thoroughly.

Roughly chop the garlic, spring onion, flat-leaf parsley, and bell pepper for the marinade.

Blend the chopped marinade ingredients with 2 tsp black pepper and 1 tsp salt into a coarse green paste.

Cut shallow slashes into the 4 chicken thighs, then rub them all over with the green marinade paste.

Leave the marinated chicken thighs to rest for 20 minutes while preparing the remaining ingredients.

Finely chop 2 onions: 1 onion for the cooking base and 1 onion for the mustard onion sauce.

Place the marinated chicken, 1 chopped onion, cymbium sea snail, 2.1 l water, and 2 bay leaves in a large pot.

Bring the pot to a boil, then simmer the chicken mixture over medium-low heat for 30 minutes until the chicken is cooked through.

Remove the cooked chicken thighs and cymbium sea snail from the broth, then keep them covered and warm.

Season the broth with salt and black pepper, then add the drained 700 g rice.

Cover the pot and cook the rice over low heat for 20 to 25 minutes until tender and the liquid is absorbed.

Combine the remaining chopped onion with 1 tbsp mustard, salt, and black pepper to make the onion sauce.

Fluff the cooked rice, then serve it topped with chicken thighs, cymbium sea snail, and the mustard onion sauce.
