Preparation Steps
Step 1/16
Place the butter in the saucepan and cook over medium heat until it smells nutty and brown milk solids form at the bottom.
Step 2/16
Pour the browned butter into the heatproof mixing bowl and let it cool until warm, about 10 minutes.
Step 3/16
Add the brown sugar and caster sugar to the cooled browned butter.
Step 4/16
Whisk the butter and sugars until thoroughly combined and glossy.
Step 5/16
Add the whole egg, egg yolk, and vanilla extract to the sugar mixture.
Step 6/16
Whisk until the mixture becomes pale and slightly thickened.
Step 7/16
Add the all-purpose flour, baking powder, and baking soda to the bowl.
Step 8/16
Fold the dry ingredients into the wet mixture just until a soft dough forms.
Step 9/16
Add the chopped hazelnuts and caramelised white chocolate callets to the dough.
Step 10/16
Fold until the hazelnuts and chocolate are evenly distributed through the dough.
Step 11/16
Scoop the dough into 10 equal balls, about 55 g each, and place them on the parchment-lined baking tray.
Step 12/16
Cover the dough balls and refrigerate for at least 60 minutes; chill overnight for deeper flavor if preferred.
Step 13/16
Preheat the oven to 180°C / 350°F and space the chilled dough balls well apart on the lined baking tray.
Step 14/16
Bake for 15 minutes, until the cookie edges are golden while the centers still look soft.
Step 15/16
Sprinkle the hot cookies with flaked sea salt.
Step 16/16
Let the cookies rest on the baking tray for 10 minutes, then transfer them to a wire rack to finish cooling.
