Preparation Steps
Step 1/12
Preheat the oven to 180°C fan (350°F). Line the 25 x 20 cm brownie tin with baking parchment.

Place the 600 g sweet potatoes on the large baking tray. Roast for 40–45 minutes, until completely tender.
Step 3/12
Set the roasted sweet potatoes aside until cool enough to handle. Reduce the oven temperature to 160°C fan (350°F).

Peel the cooled sweet potatoes, discarding the skins. Add the peeled sweet potatoes to the food processor.

Add the 200 ml oat milk and 10 pitted Medjool dates to the food processor. Blitz until the mixture is completely smooth.

Melt 100 g of the 70% cocoa dark chocolate in the microwave in short bursts. Reserve the remaining 100 g dark chocolate as rough chunks.

Whisk the 200 g self-raising flour, 1 teaspoon baking powder, 100 g coconut sugar, 50 g cacao powder, and 1 teaspoon flaky sea salt in the large mixing bowl.

Add the smooth sweet potato mixture and the melted dark chocolate to the dry ingredients. Stir until evenly combined.

Add the 2 tablespoons olive oil, 1 teaspoon vanilla extract, and reserved dark chocolate chunks. Stir until the batter is smooth and the chunks are evenly distributed.
Step 10/12
Transfer the batter to the lined brownie tin. Level the surface using the back of the wooden spoon or a spatula.
Step 11/12
Bake the brownies at 160°C fan (350°F) for 20–25 minutes. Remove when the centre is just set.
Step 12/12
Sprinkle the remaining 1 teaspoon flaky sea salt over the warm brownies. Cool completely in the tin before slicing into 12 portions.
