Preparation Steps

Preheat the oven to 425°F (220°C). Line the sheet pan with parchment paper and lightly coat it with cooking spray.

Cut the 1 lb chicken thighs into chunks. Add the chunks to the food processor.

Pulse the chicken a few times until finely chopped but not completely smooth.

Add the egg, 1/2 cup panko breadcrumbs, 1/4 cup Parmesan cheese, 1/4 cup Greek yogurt, olive oil, Italian seasoning, 1 teaspoon garlic powder, 1/2 teaspoon salt, paprika, and 1/2 teaspoon black pepper.

Pulse just until the chicken mixture is evenly combined. Do not over-process into a smooth paste.

Transfer the chicken mixture to the prepared sheet pan. Press it into one large, even cutlet about 1/4 to 1/3 inch thick.

Mix the remaining 1/2 cup panko breadcrumbs and 1/4 cup Parmesan cheese in the small bowl. Sprinkle the mixture evenly over the cutlet.

Gently press the breadcrumb topping into the chicken. Lightly spray the top with cooking spray.

Bake for 18 to 22 minutes until the topping is golden brown. Check that the thickest portion reaches 165°F (74°C).

Combine Greek yogurt for dip, ketchup, mustard, hot sauce, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl. Stir until smooth.
