Preparation Steps

Preheat the oven to 180°C (350°F) and line 1 baking tray with parchment paper.

Whisk 120 g all-purpose flour, 3/4 tsp baking powder, 75 g caster sugar, and 15 g pistachio powder in the mixing bowl until evenly combined.

Melt the 30 g butter, then whisk it into the dry ingredients with 1 egg and 1/2 tsp vanilla extract.

Add 1 to 2 tbsp milk a few drops at a time, stirring until the mixture forms a cohesive dough.

Fold 60 g pistachios through the dough until they are evenly distributed.

Shape the dough into one long log, about 25 cm long and 5 cm wide, on the lined baking tray.

Bake the log at 180°C (350°F) for 30 minutes until lightly golden and firm.

Transfer the baked log to a cooling rack and cool it completely so it can be sliced cleanly.

Place the cooled log on the cutting board and slice it with a serrated knife into 1 cm thick pieces.

Arrange the slices cut-side down on the baking tray and bake at 180°C (350°F) for 15 minutes, until golden and crisp.

Melt 30 g chocolate and drizzle it over the cooled biscotti, if desired.
