Cut the Havarti cheese block into 48 even cubes. Reserve 24 cubes for a cheese board and set aside the remaining 24 cubes for the potato balls.

Whisk the large egg in one small bowl. Place the panko bread crumbs in a second small bowl and the all-purpose flour in a third small bowl.

Scoop about 1 1/2 tablespoons of chilled mashed potatoes. Flatten the portion in your hand and place 1 Havarti cube in the center.

Seal the mashed potatoes completely around the cheese. Roll into a smooth ball, then coat the ball lightly in all-purpose flour.

Repeat the stuffing and flour-coating process with the remaining mashed potatoes and 23 Havarti cubes. Arrange the coated potato balls on a clean surface.

Preheat the oven to 400°F (205°C). Spray both mini muffin tins lightly with avocado oil spray.

Use a fork to dip each flour-coated potato ball into the whisked egg. Lift it out and allow excess egg to drain back into the bowl.

Transfer each egg-coated ball to the panko bread crumbs. Turn it until all sides are fully coated with breadcrumbs.

Place one breaded potato ball into each greased mini muffin cup. Keep the balls in separate cups so they retain their round shape.
